Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Raw shelled eggs stored over raw pork in reach-in cooler. Also, raw chicken stored over raw pork in reach-in cooler. Operator rearranged raw eggs and raw chicken to properly store.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In flip top reach-in cooler, cut lettuce (69F - Cold Holding). Lettuce stored above fill line. Operator moved lettuce to bottom of cooler. Also, in small drink cooler, milk (62F - Cold Holding). Operator stated milk was out to make customer drink then put back into reach-in cooler.
Food-contact surface soiled with food debris, mold-like substance or slime. Cutting board on top of 3 compartment sink soiled.
