Employee refilled ice surrounding butter. Second temp 62F, operator relocated back to cooler. Discussed using time as a public health control potatoes (55F - Cold Holding) operator state's potatoes were sitting on counter briefly. Operator moved to reach in freezer for rapid chill. Second temp 46F. Top of flip top cooler on cookline, right side: bleu cheese (54F - Cold Holding) second temp 39F; eggs (54F - Cold Holding) operator voluntarily discarded, unable to get second temperature; ham (50F - Cold Holding) second temperature 37D; turkey (47F - Cold Holding)second temp 37F. Operator was able to provide temperature log that showed that the food was at proper temperature less than 4 hours ago. Operator relocated food to reach in freezer for rapid chill.

Operator stated butter was taken from refrigeration an hour and a half prior to inspection. Butter placed back into cooler. Retemp 39F In right lift top cooler across from grill: Turkey 48F, retemp 45F; Ham 51F retemp 42F; Bleu Cheese 52F, unable to get second temp as employee discarded; Garlic Butter 53F, unable to get second temp as employee discarded; Pancake Batter 57F retemp 45F. Operator states all food was taken out of the walk in cooler at 7:30am and food was at proper temperature. Operator moved TCS foods back to walk in and called maintenance to come look at unit today.
