Inside walk-in cooler: chicken (54F - Cold Holding); sliced ham (53F - Cold Holding); ham (51F - Cold Holding); meatballs (54F - Cold Holding). Ambient air temperature is 55F. Manager called a technician, who arrived during this inspection. The technician stated the cooler is functioning correctly and the employees need to keep the door closed. Manager stated the temperatures were 41F or below at 8am. Manager began moving foods to other coolers and adding ice to cool product to 41F.

Manager stated he was using the meatballs approximately one hour prior and may have left them sit on the counter for too long. Inspector had manager place the meatballs in the freezer to cook to 41F. On shelf near walk-in cooler: cheese (50F - Cold Holding). Manager stated the cheese has been sitting in shelf for approximately 20 minutes. Inspector had manager place the cheese into the freezer to cool to 41F.
