Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside reach-in cooler behind front counter: pork (45F - Cold Holding). An employee stated it was in-use 20 minutes prior. Inspector had employee place the pork into the freezer to rapidly cool to 41F.
