Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. sliced mozzarella (46F); sausage (47F); raw chicken (46F); cooked steak (47F) in main flip top cooler. Cooler has an ambient temperature of 46F. Chef stated food was restocked from the walk in cooler approximately 3 hours ago. Manager moved food to walk in cooler. pre made cheese pizza (48F); cooked chicken (48F); diced ham (47F); cooked sausage (48F) in pizza cooler. Cooler has an ambient temperature of 48F. Employee stated food was restocked from walk in cooler approximately 3 hours ago. Employee moved pizza to walk in cooler and placed the rest of the food on ice.
Employee chewing gum while preparing food or while in a food prep/food storage/warewashing area. Chef chewing gum while preparing food on cook line. After reviewing with chef he voluntarily discarded gum.
Equipment in poor repair. Main flip top cooler on cook line has an ambient temperature of 46F and door gaskets are torn.
