Display case: beef empanadas (93F - Hot Holding); ham and cheese empanadas (98F - Hot Holding) Discussed with the operator and provided the handout for Time As A Public Health Control. As per operator prepared less than 4 hours before the the inspection. Operator discarded and prepared new empanadas. Operator completed the form during the inspection.
