Stop Sale issued due to food not being in a wholesome, sound condition. Three packages of raw tuna thawed inside reduced oxygen packaging. The tuna is completely thawed. The package does have a label indicating the tuna must be removed from packaging prior to thawing.

Inside walk-in cooler: crab ettoufe (47F - Cold Holding); half and half (49F - Cold Holding); chicken (49F - Cold Holding). The chef stated all of the listed items have been held continuously inside the walk-in cooler since the previous day.

Toxic substance/chemical improperly stored. "Raid" bug poison and several cans of spray paint stored on shelf in cabinet above boxes of soda syrup and above cooking oil. The chef removed the chemicals from the area during this inspection.

Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Cooked mushroom sauce missing date on shelf inside outdoor reach-in cooler. Chef stated it was made on Saturday and added the proper date mark during this inspection.
Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Walk-in cooler ambient air temperature 47F. Several stop sales issued inside unit. Management is utilizing ice to maintain temperatures on the majority of temperature controlled foods inside the walk-in cooler.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package.
