Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In flip top reach in cooler, cut lettuce 48F. Lettuce placed into reach in cooler approximately 15 minutes prior. Lettuce placed into bottom of reach in cooler to cool.
Mobile food dispensing vehicle service opening not kept closed except during food service. Both window open without serving customers. Windows closed.
