Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At front counter HOT DISPLAY - assorted empanadas (108-120F - Hot Holding). Per manager prepared 2.5 hrs. All empanadas removed to be reheated.
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Splitter with attached hose next to mop sink missing vacuum breaker.

At front counter cold display, house made flans, cheesecake, and tres leches desserts missing date marks. Per manager made 48 hrs ago. Manager began to add dats to containers.
