Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed in steam well Chili (120F-129F - Hot Holding). Manager stated was placed on at 6am. Manager removed and reheated. Took second temperature at 172F.

Container of gravy not date marked in four door stand alone cooler near grill. Employee stated gravy was prepared on 8/24 and she date marked the gravy.
Employee with artificial nails/nail polish working with exposed food without wearing intact gloves. Employee had long painted artificial nails while handling exposed food on cook line.
No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Certified manager showed up at the end of the inspection.
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Manager does not have a measuring device to check hot water sanitizer dish machine.
