Manager or person in charge lacking proof of food manager certification: Olga Gurkovskaya is the unit manager and has been for approximately 7 months but does not yet have her Certifed Food Manager. She states she has taken it but has not been given a copy of it. Inspector able to verify her certificate is current, 05/19/2022.

Employee used tobacco, ate, or drank then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands: cook game in from outside, put on his beard net, and then proceeded to don gloves without washing his hands. Inspector gave corrective feedback and he washed his hands.

Unit Manager immediately noticed and put the time up. Eggs were there for less than 1 hour.
