Pesticide-emitting strip present in food prep area. Guidelines were communicated with operator on proper usage of strips found near the three compartment sink.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Raw beef held at 45F at 10:15. Temperature was communicated to operator and operator took action by adding ice to the pan that the beef was held in. Upon second temperature check at 10:40 the beef temped at 33F.

High temp machine observed at 114 degrees F and not reaching 160 degrees F. Manager states they are aware and a work order has been placed. Dish machine was observed being used during inspection. Manager advised to cease using and switch to three compartment sink. Manager set up three compartment and will use until repairs are made.
