Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Upon inspection, observed diced ham 46f (less than 4 hours per manager) in upper make bar cooler. Observed waffle batter 50f in lower make bar cooler (less than 4 hours per manager). Also observed in lower make bar cooler country ham 49f, diced ham 48f, chicken sausage 49f Country ham, diced ham, chicken sausage have been in lower make bar cooler over 4 hours per manager.

Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Observed dish machine high temperature 152F. Instructed operator to set up sanitizer at three compartment sink.
