Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Upon inspection, observed hot water sanitizing dishmachine not reaching 180f on gauge and not able to obtain 160f temperature at dish surface. Maintenance arrived prior to end of inspection and 180f reading at dish surface area was observed.

Manager removed food items and placed them in a bin and moved them to another location during inspection.
