Met inspection standards. 3 violations recorded, none serious enough to require a return visit.
Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed cook touching raw beef, pork, change gloves no handwash. Spoke with employee, employee discarded gloves and properly washed hands before resuming work.
Time/temperature control for safety, commercially processed food reheating for hot holding not heated to a minimum temperature of 135 degrees Fahrenheit in all parts. After transferring to steam well, temperatures cooked sausage gravy (118F - reheating ); cooked beef chili (114 F - Reheating) per operator completed reheating on stovetop and transferred for hot holding. Operator began reheating less than 30 minutes prior per manager.
Opened employee beverage container in a cold holding unit with food to be served to customers. 2 drinks for employees at top of reach-in cooler closest to dining room entrance to cook line over milk, eggs. Employee drink next to condiments under front counter near entrance.
A return visit. The problems from the previous inspection had been dealt with.

Employee switched from working with raw food to single service articles without washing hands. Observed employee handling raw bacon with gloves, removed gloves, handled plastic straws, no handwash step. Spoke with employee regarding proper glove usage.
Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Dishwasher (Temperature 147F) after running multiple times, operator set up manual sanitation in triple sink, chlorine 100ppm.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer Bucket (Chlorine 200+ppm) by counter near to office.
Employee personal food not properly identified and segregated from food to be served to the public. Observed employee meals and drinks over food for customers in 4 door reach-in cooler by office. Operator moved to bottom shelf together for proper storage.

Observed cook cracking raw shell eggs then continue working with clean pans and plates, no handwash step. Spoke with operator regarding proper handwashing, operator changed gloves and washed hands prior to returning to work.
Pesticide-emitting strip present in food storage area. Two by bibb in box soda storage in back storage room. Operator removed.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Drop in part reach-in cooler left side flat grill:; diced ham (51F - Cold Holding); sliced ham (50F - Cold Holding); sliced tomatoes (51F - Cold Holding) for 2 hours per operator.
Wet wiping cloth not stored in sanitizing solution between uses. Stored on condiment cart across from coffee station cook line closer to office. Operator place in sanitizing solution.

Cook line main prep cooler top part sliced tomatoes (51F - Cold Holding); ham (52F - Cold Holding); sliced cheese (48F - Cold Holding) after busy breakfast rush for one hour per operator with lid left open. Operator closed lid.
Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Dust around vents on cook line.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Gaskets on reach-in cooler by office soiled.

Employee rubbed hands together for less than 10-15 seconds while washing hands. Observed employee at cook line wash hands to begin working with foods rub hands together with soap approximately 5 seconds. Spoke with employee regarding proper handwashing, employee rehashed hands before resuming work.
Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature.in reach-in cooler to right of cook top, observed raw ground pork over raw bacon. Discussed proper storage with operator, operator rearranged foods for proper food protection.

Discussed with manager that after cracking raw shell eggs, hands must be washed after removing gloves before changing tasks. Manager discussed with employees, who properly washed hands before returning to work.

Toxic substance/chemical improperly stored on table by triple sink with single service to go containers. Operator moved chemicals to proper storage.
In-use ice scoop stored on soiled surface between uses. On top of ice machine. Operator cleaned and placed in container.
Single-service articles improperly stored. Observed single service iced tea bags stored uncovered on dry storage rack in far back kitchen. Coffee filters uncovered at far right cook line and far left cook line by beverage stations. Operator covered all items.
Nothing was found. The inspector recorded no violations at all.
