Both items less than 4 hours per manager. Also observed waffle batter 45f, rehydrated hash browns 46f, chili 46f in upright reach-in cooler in rear of establishment. All items in rear upright reach-in cooler have been in the cooler overnight per manager.

Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Highest temperature achieved was 155F. Repair services already at establishment began repairing dishmachine and achieved 160.6F during inspection.
