Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Dishwasher is currently in disrepair. Operator has maintenance scheduled. Operator is currently not using dishwasher and is doing all ware washing downstairs in the main kitchen.
Equipment in poor repair. Prep cooler is not in use and waiting on repairs. No food in coolet
