Walk in cooler-Raw chicken wings 47F, raw chicken thighs 47F, chicken wings cooling 57F (10:30-11:24), milk 49F (10:30-11:30). Cold hold- reach in cooler/make bar-Breaded station- Chicken thigh 46F, chicken tender 48F, milk bath 49F, milk 49F (10:30-11:29). Manager had employee place all items on ice.
Chemical test kit not used to ensure proper sanitization of equipment and utensils when using a chemical sanitizer. Sani bucket- sink and surface sanitizer solution 0 ppm. Manager corrected to 700 ppm.
