At this current rate of cooling food will not reach 41F or below within 4 hours. American cheese 61F at 10:00 to 57F at 10:30 Operator added ice to foods. Observed in deli case cooked chicken 49F at 10:25 to 47-49F at 10:50 (cooling since 7:00). Operator moved to walk in cooler to quick chill.
