Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed 2 partial cartons of milk on the front line, one was 83° one was 51°. Time is not used for these items. The 83° was loose on the counter. The 51° was in a melted iced bath, in the top table of a reach-in cooler. Both had been out over 4 hours.

Employee touched soiled apron/clothes and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed: drive thru staff, hands in pocket, adjusted headset, and proceeded to scoop ice, no hand wash.
Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed drive thru staff, use drink cup(no handle) to scoop ice.
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed: no time mark on shredded cheese by the fry area. An adjusted time mark was added.
Equipment and utensils not properly air-dried - wet nesting. Observed: wet nested food service pans on the rack above the prep sink.
Floor area(s) covered with standing water. Observed: under the prep sink, standing water in the corner and in the grouted areas in front of the sink.
Garbage on the ground and/or pad around dumpster. Observed: garbage on the ground around the dumpster.
Ice buildup in reach-in freezer and/or walk-in freezer. Observed: ice buildup in the cook line fry freezer.

Plumbing system in disrepair. Observed the dining area soda machine drain not draining properly. The drain was cleared.
Sanitizer bucket stored with food, equipment, utensils, linens, single-service, or single-use articles. Observed sanitizer bucket with 300 ppm quaternary amonia solution stored over tray liners and paper towels.
Unclean building components, attachments or fixtures. Observed ceiling vents soiled throughout the kitchen. ALSO, the floor under the rolling racks by the walk-in freezer have an accumulation of debris.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed the dish wash machine at 0 ppm for chlorine. Pelleted were added and 100 ppm complied.

Food stored on floor. Observed: a partial bag of soda concentrate, connected on the floor in front of the rack. This was placed on the rack.

And dried splatter at the drive thru freestyle machine to the right of the dispenser. Items were being cleaned during the inspection.
