Observed cook touching cloths pants and shirt while engaging in food preparation. The DM educated cook and had him wash hands after discussion.
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. The DM stated the high temperature measuring device was ordered.

No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Emailed manager DBPR Form HR 5030-103. The manager is assuring all personnel read, sign and maintain in files.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed soda machine soiled in dining area. The manager had the soda machine wiped down during inspection.
