Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed walk in cooler: cooked eggs 53F and meat patties 53F at 11:30am. Per manager cooler door has been open for approximately 10 min at 11:15am due to restocking. New temperature at 2:30: meat patties at 46F and cooked eggs at 53F. Per operator cooked eggs held overnight, see stop sale. Operator moved all other TCS food from walk in cooler to walk in freezer. Observed meat patties 52F at 11:30am in reach in cooler at cook line. Per employee stocked patties in cooler at 10:00am. New temperature is 49F at 12:30. Observed reach in cooler ambient temperature at 49F. Meat Patties cooling rate is improper, manager covered meat patties with ice and moved to walk in cooler. New temperature is 50F at 2:25. See stop sale.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed sliced tomatoes in walk in cooler at 58F prepped at 11:32am. New temperature 57F at 12:30. Improper cooling rate due to ambient temperature of walk in cooler at 49F because of prolonged opening of cooler door. Manager iced bin of sliced tomatoes for better cooling. New temperature is 47F at 1:30.

Equipment and utensils not properly air-dried - wet nesting. Observed stack of wet bins stored on shelf behind dish area. Manager separated bins to properly air dry during inspection.
Food stored on floor. Observed cooking oil stored on floor behind fryer station. Manager properly stored oil during inspection.
