Observed 2 employees washing hands with soap, then closing the valve to the sink with wet hands grabbing handle to dispense paper towels. Observed 1 employee go to the prep area placing bacon into pans with a spatula. The other employee walk to front line to pull sausage from the cook line with the spatula. Coached employee how to wash hands properly. Employees washed hands properly.
Hot time/temperature control for safety food received at less than 135 degrees Fahrenheit. Observed dice chicken (84F - Hot Holding) in the microwave, as per operator not sure when it was taken out. Morning shift have not touched the microwave during the shift. Operator discarded the item.
Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Observed frozen breaded chicken over frozen cooked cod fish in the reach in freezer by the three compartment sink. Emailed form to operator how to store items correctly.
