Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Reach in cooler, meat well: raw shell eggs (54F - ambient temperature ). As per operator, placed in the meat well 1 hour before the inspection. Operator placed the the raw shell eggs on ice.

Employee has not received adequate training related to their assigned duties as evidenced by lack of general knowledge in performing their assigned duties. The employees and general manager do not have knowledge of how long the meat patties are cooked on the flat top, the meat patties are by sight. Cooking temperatures are documented on a shift basis. Training is based on a training video 3 stages.

Reach in cooler, meat well: raw shell eggs (54F - ambient temperature ). As per operator, placed in the meat well 1 hour before the inspection. Operator put in a service call for repair. Operator placed ice inside the meat well and checked the circuit breaker, flipped it back on. checked 15 minutes later, the ambient temperature of the meat well at 39F.
