Operator stated that the food had been there overnight and that last night delivery truck broke something on the door. Operator set aside food for disposal.

Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. See stop sale. Observed blue cheese, cheddar cheese, and cut tomatoes on time as a public health control in the cook line area with no time marks. Manager stated the items were on time for approximately 30 minutes. Manager placed time marks on the items.
