Observed Gorgonzola cheese at 49F, as per operator not prepped or portioned today, placed in make table at approximately 7am, 2 hr prior to inspection. Operator placed in walk-in cooler for quick chill. Retested 43F

No items prepped or portioned. Operator moved item to walk in cooler to quick chill. Advised operator to refrain from using unit until such time all TCS items are maintained at 41F and below.
