Quaternary solution in three compartment sink testing at 0ppm. At the time of inspection, operator dumped original solution and filled third compartment with a quaternary sanitizer solution testing 400ppm.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Shredded cheese 57F, sliced cheese 49F in sandwich maketable across from fryers. Items in cooling unit for less than an hour, per operator. Items voluntarily discarded at the time of inspection.
Food-contact surface soiled with food debris, mold-like substance or slime. Presence of buildup around the nozzle in the soda dispensers on the drive thru window and the dining room area.
