Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine chlorine sanitizer 0ppm. Advised operator to set up 3 compartment sink to wash, rinse, sanitize all dishes until machine is repaired.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At walk in cooler, diced tomatoes (48F - Cold Holding), not prepared or portioned today. Operator stated item held in cooler since 7:00am. Operator discarded.
