Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishmachine chlorine sanitizer at 0ppm. The operator replaced the empty container. Chlorine sanitizer solution at 100ppm following replacement of solution.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Boursin cheese (51F - Cold Holding) in the reach in cooler on the cook line in a double pan. The operator stated the cheese had been held for approximately 2.5 hours. The operator stored the cheese in the lower portion of the reach in cooler. Observed blue cheese crumbles (53F - Cold Holding); sour cream (51F - Cold Holding) in the cold holding unit at the server expo line. The operator stated the potentially hazardous foods had been held for approximately 2.5 hours. The operator voluntarily discarded the above foods.
Vacuum breaker missing at mop sink faucet on splitter added to mop sink faucet.
Clean glassware stored next to handwash sink exposed to splash in the dish area. The operator properly stored the clean glassware.

Handwash sink used for purposes other than handwashing. Located behind bar, strainer placed in basin, evidence of being used as dump sink. Operator removed and cleaned basin.
