Employee switched from working with raw food to ready-to-eat food without washing hands. Observed employee with gloved hands place another pair of gloves over initial gloves, retrieved and cracked raw shell eggs onto the grill. Employee removed outer gloves by touching the outer exterior surface of the outer glove near wrist area. Employee discarded outer glove then took bun and placed lettuce and tomato on the bun. Company procedures state to insert two fingers inside the second poly glove above the back of wrist.
