No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Establishment does not have any written procedures for hush puppies and fried fish held on time.
Dead roaches on premises. Approximately 20 dead roaches in cabinet across from steam table. 2 dead roaches under prep table next to fryer. Approximately 12 dead roaches under triple sink/hand wash station. Operator began to clean up all dead roaches during inspection.
Floor soiled/has accumulation of debris. Floors under reach in freezer. Also wall behind prep table next to fryer has a build up of debris.
