In stand up warming unit, sausage stew (125F - Hot Holding); chicken (109F - Hot Holding). Operator items had been in warming for approximately 2 hours. Operator turned up warming unit.

Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Observed bag of fried green tomatoes in same metal container as raw hamburger no longer commercially packaged. Operator moved green tomatoes from pan and placed then in acceptable storage.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed ranch in keg beer reach in cooler area at 48F, operator stated that the ranch had been placed there an hour ago, operator took ranch and placed it in walk in cooler, Observed ranch at 45F in ice bath at entrance of bar area, operator added ice to cover cups.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At cook line in holding smoker oven, Turkey was at 118F, operator states that it had been hot holding for approximately an hour, operator turned up temperature in oven. After 30 min a 2nd temp was taken at 167F
Toxic substance/chemical improperly stored. Observed two spray bottles stored over ranch and single service items near pass through window, at wait station. Operator moved spray bottles to proper storage.

No consumer advisory on online menu, asked operator if they serve raw meat upon customer request and the operator states that they do. informed operator that they needed a consumer advisory on all menus. Operator called corporate and stated that it will get corrected today.
Spray bottle containing toxic substance not labeled. Observed unlabeled spray bottle by door in ware wash area, operator stated that it was degreaser and placed a label on it
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed mold like substance on ice machine deflection plate at entrance of bar area.
Duct tape used to repair nonfood-contact surface. Observed syrup soda box at entrance to prep area that was in use being held together by duct tape. Operator removed box with tape.
