Stop Sale issued due to food not being in a wholesome, sound condition. Observed 11 thawed commercially sealed packaged salmon stored in reach-in cooler on cook line. Salmon packaging displayed for salmon to be removed prior to thawing and was not removed from sealed packaging. See Stop Sale.
Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed open package of hot dogs that was open two days ago. Operator date marked hot dogs.

Warewashing sanitizing solution exceeding the maximum concentration allowed. Triple Sink (Quaternary 500ppm) solution exceeds maximum concentration allowed. Test strip blue more than 500ppm. Operator called to have serviced.

Operator called to have reach-in cooler serviced.
