Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed hamburger patties (49F - Cold Holding); cut tomatoes (50F - Cold Holding); cut onions (52F - Cold Holding) in reach in cooler across fryers at kitchen area, as per operator since last night. Operator discarded food during inspection. Also observed marinated raw chicken wings (68F - Cold Holding ) as per operator less than 1 hour, operator moved raw chicken wings to reach in cooler.
Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. Provided form to operator the Big 6 handout.
