Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In walk-in cooler, corn (48F - Cold Holding); ranch (50F - Cold Holding). Items prepared yesterday. Manager stated door open for prep. Ambient thermometer showing 50f, ambient temperature dropped to 42f in 10 minutes.
Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. At mop sink, backflow preventer missing on non chemical dispenser side of splitter.
Handwash sink not accessible for employee use at all times. At dish area, handles for mops blocking access to handwash sink.

No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Certified Food Manager arrived during inspection.
Required employee training expired for all employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. 3 SafeStaff certificates onsite, all expired.

Spray bottle containing toxic substance not labeled. At chemical storage shelves, spray bottle of purple chemical identified as Fabuloso not labeled. At front counter on lower shelf, spray bottle of blue chemical identified as cleaner not labeled. Manager labeled both bottles.
