Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Raw chicken (44F - Cold Holding) in walk-in cooler for less than 4 hours per person in charge. Cooler in defrost cycle when walk-in cooler door kept open. Person in charge closed door and lowered temperature. Retested Raw chicken (42F - Cold Holding) after person in charge lowered temperature.
Water leaking from pipe and/or faucet/handle. Observed condensate pipe leaking onto floor inside walk-in cooler. General contractor sealed pipe during inspection. Observed condensate line behind ice machine leaking slowly. Person in charge had contractor fix during inspection.
