Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At fryer, Raw chicken wings (50F - Cold Holding). Operator stated wings out for less than 1 hour, witch ice bag on top, not covering all wings. Operator put back into cooler to chill back down to 41°F.
