Raw animal food stored over/not properly separated from ready-to-eat food. 1. Pan of raw beef stored on shelf above pan containing cooked sausage inside reach-in cooler at front kitchen. 2. Package of raw chicken stored on shelf above package of mozzarella inside reach-in freezer in rear kitchen. Manager moved both raw items to the bottom shelves during this inspection.
Toxic substance/chemical improperly stored. Several aerosol cans containing glass cleaner stored on prep table above tortillas and on top of ice machine. Manager removed all chemicals during this inspection.
Food-contact surface soiled with food debris, mold-like substance or slime. Deflector plate inside ice machine soiled with mold-like substance.
Handwash sink not accessible for employee use at all times. Handwash sink in rear prep room completely blocked by boxes and supplies. The manager unblocked the sink during this inspection.

Raw/undercooked animal food offered and establishment has no written consumer advisory. Raw animal foods must be fully cooked prior to service. No consumer advisory posted in restaurant or on menu for eggs and hamburger meat offered undercooked upon request. Manager hung a consumer advisory on the wall during this inspection.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Pan of potato salad missing date mark inside prestige case. Manager stated the potato salad was made on-site on 6/22 and added the proper date marked during this inspection.
Equipment and utensils not properly air-dried - wet nesting. Wet nested drink cups on dish rack beside three-compartment sink.
Food stored on floor. Boxes containing soda syrup stored directly on floor in kitchen. The manager placed them on a shelf during this inspection.
Single-service articles improperly stored. Several boxes containing single-use containers stored directly on floor in back of kitchen and in exterior storage shed.
Storage of maintenance equipment/tools in areas that may result in cross contamination of food, equipment, utensils, linens and/or single-service and single-use articles. Nonfood-grade power drill stored on prep table above tortillas in back of kitchen. Manager removed the drill from the area during this inspection.

Raw animal food stored over/not properly separated from ready-to-eat food. Flat of raw shell eggs stored on top of refrigerated make-table directly on top of pan containing diced tomatoes. Manager removed the eggs from the cooler during this inspection.
Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Manager provided chlorine test strips for quaternary sanitizer.
