Observed employee enter walk in cooler and grab raw shell eggs, went to cook line and crack egg with gloves on hands and then handle clean to go containers without washing hands. Raw animal food stored over/not properly separated from ready-to-eat food. Raw frozen prep chicken stored over frozen fries in walk in Freezer. Raw prep chicken stored over cooked pork in reach in cooler on cook line. Employee properly stored
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Cooked chicken (75F - Cooling); noodles (77F - Cooling); cooked chicken (42F - Cold Holding); cooked pork, cooked chicken, cooked shrimp, noodles, raw chicken, raw shell eggs - ambient temperature (44-48F - Cold Holding), all stored in walk in cooler and employee going in and out of cooler leaving door open at times and was cleaning floor and some foods were left out on cook line to replenish for approximately 1 hour as per manager and brought back to cooler. No ambient thermometer. Inspector ambient thermometer reading at 47F. Manager closed door and adjusted thermostat and now reading at 41F. Operator place bags of ice on some foods in walk in cooler. Re-temp some foods at 39F. Walk in cooler temperature at 39F now.
