Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken stored over raw fish in standing reach in cooler at corner of kitchen. Person in charge rearranged food items to proper storage levels.
Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Observed flat of raw shell eggs stored on center prep table. Person in charge stated eggs were removed from reach in cooler 2 hours prior and returned to reach in cooler.
Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed opened deli ham with no date marking when it was opened in reach in cooler at corner of kitchen.
No proof of required state approved employee training provided for any employees. Observed 2 employees engaging in food preparation with 1 having no food handler certification. Other employee is certified food manager.

Food-contact surfaces in contact with time/temperature control for safety food not cleaned at least every four hours. Inspector had discussion with owner and discovered food contact surfaces in the kitchen were not being sanitized every four hours as required. Per operator, sanitizer is only being used when washing dishes. Inspector demonstrated proper sanitizer solution set up and testing of the solution and owner instructed manager on proper procedures.
Gyro meat initially cooked longer than 60 minutes was cooled prior to being fully cooked. See stop sale. Two partially cooked intact gyro cones in walk in freezer.
