Stop Sale issued due to food not being in a wholesome, sound condition. Observed two snapper filets stored in walk in cooler thawed and still within the commercially processed reduced oxygen packaging. Manager discarded filets.
Clam/mussel/oyster tags not marked with last date served.
Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Observed high temperature dish machine reaching 155F. Manager discontinued the use of dish machine and set up triple sink with quaternary sanitizer measuring 400ppm.
Raw or undercooked oysters offered and establishment has no consumer advisory sign provided on wall, menu, placard, table tent or by any other written means. Raw animal foods must be fully cooked prior to service. Manager printer and posted advisory before end of inspection.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed in a steamer: Marinara sauce (120F - Hot Holding). Operator stated it was heated in a microwave 30 min ago then placed in the steamer. Operator placed it back in the microwave to get to temp.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no chemical test kit for their quaternary triple sink.
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Observed no device to measure their hot water sanitizer.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed the operator taking out frozen ROP fish and placing it in running water to thaw. Operator had his employees cut open and remove the fish.
