Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Blue cheese olives were being held at room temperature at the bar. Internal temperature measured 68F. Explained to employee why blue cheese olives must be held below 41F. Employee said olives had been out approximately one hour. Olives placed back into refrigeration.
