In-use tongs stored on equipment door handle between uses. Tongs hanging on equipment in bakery station. Chef removed tongs and placed at dishwasher.
In-use wet wiping cloth/towel used under cutting board. Cloth stored underneath cutting board on cooks line. Manager removed cloth placed cutting board at dishwasher.
Wiping cloth chlorine sanitizing solution not at proper minimum strength. Sanitizer solution quaternary ammonia 25pom. Manager refilled sanitizer solution retested at 200ppm.
