Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed raw beef, raw chicken, cooked chicken, cooked vegetables all in individual Reduced Oxygen Packaging. Discussed with operator establishment can continue using Reduced Oxygen Packaging, but foods must be labeled with name of product, time and date packaged, and used within 48 hours. Provided operator with Ez template for ROP storage.
Sanitizer bucket stored with food, equipment, utensils, linens, single-service, or single-use articles. Near the prep area under the handwashing sink, observed sanitizer placed directly on the floor. Operator placed sanitizer bucket inside another bucket to provided a barrier between the floor and sanitizer bucket.
