Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Tested at 0 ppm chemicals need to be calibrated technician was there in the morning to work on and is coming back tomorrow. Discussed with manager to directly pour the solution into buckets and add water.

Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee went from outside of back door to inside kitchen and started to don gloves without washing hands. I asked her to wash her hands.
