On the cook line observed cooked sprouts, cooked greens on a time control without a time mark. Operated stated foods have been out for less than two hours. Operator time marked foods.
Food stored on floor. In the walk in cooler, observed boxes of unwashed vegetables stored on the floor. Operator picked boxes off the floor and placed on shelves at least 6inches off the floor.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. At time of inspection Dishwasher was reading (Chlorine 10ppm). Operator replaced sanitizer. End reading Dishwasher (Chlorine 50ppm)
Raw animal food stored over/not properly separated from ready-to-eat food. In reach in cooler across cook line, raw shrimp was stored over ready to eat foods. Operator rearranged foods for proper storage.
Stop Sale issued due to food not being in a wholesome, sound condition. Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use. In walk in cooler, raw salmon still in packaging fully thawed stored overnight per operator. Discussed with operator it is unsafe to sell to the public.
