Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Operator has quat test strips, using chlorine sanitizer.
Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Reach-in cooler ambient temperature 60f. No Time/Temperature Control for Safety foods at time of inspection. Do not operate until unit is reinspected.
Equipment in poor repair. Gasket on stand up reach-in cooler torn.
Nonfood-contact equipment exposed to splash/spillage not constructed of materials that are corrosion resistant, non-absorbent, smooth and easily cleanable. Lower shelf on prep table has rusting.
