Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Chicken stored in flour in kitchen breading station: chicken (55F - Cold Holding). Employee stated chicken placed in flour 30 minutes prior to temperature being taken. Employee proceeded to cook chicken.
