Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Employee washed slicer in triple sink then rinsed with water and placed on drying rack. Inspector coached employee on using sanitizer after cleaning and employee sanitized slicer.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Ranch dressing at front counter at 57F. Manager states dressing removed from refrigeration approximately 1.5 hours prior. Dressing moved to walk in freezer and approximately 15 minutes later temperature at 43F.

Uncovered food stored near sink exposed to splash/drips. Paper towel dispenser in kitchen installed directly over raw chicken at breading station. Cook covered raw chicken and manager placed paper towels in another location close to sink.

Ceiling/ceiling tiles/vents/walls/floors soiled with accumulated food debris, grease, dust, or mold-like substance. Floor under and behind ice machine is soiled. Floor in corners at three compartment sink and surrounding area is soiled. Ceiling tiles above breading station are soiled.
In-use knife/knives/utensils stored in cracks between pieces of equipment. Two scrapers stored in between cracks of equipment on cook make line by french fry holding area. Scrapers are used to move ready to eat fries forward as used. Operator removed scrapers.
