In warming units on main make line in kitchen, chicken wings (128F-130F - Hot Holding, retemp @ 175F-178F); chicken nuggets (127F - Hot Holding, retemp @ 172F-176F). Operator stated chicken wings and chicken nuggets were cooked 10 minutes prior. Employee dropped items back into fryers and brought above 165F before hot holding again.
Required employee training provided by a third-party employee training program and operator unable to provide original certificate for employees trained. Multiple employee food handler training photocopied.
